Three Ingredient Holiday Recipe: Roasted Delicata Squash

Here is my healthy yet oh-so-mouthwatering side dish for holiday tables this year. It is simple to make, takes only 30 minutes and has only three ingredients - and people rave about it! It truly is a healthy yet decadent tasting side that fits right in with the rest of the yummy sides, but offers up a good amount of fiber, vitamin C, antioxidants and potassium! My tip for choosing a Delicata Squash is to look for a yellow color that is creamy, with green or orange stripes. You want one that feels hefty, and try to choose one that is about the same size so when you cut it the pieces are even.  


You can customize this dish by adding a sprinkle of roasted walnuts, a drizzle of balsamic reduction, or simply enjoy on its own!


Roasted Delicata Squash

Makes 4 servings 

Ingredients:

2 Delicata Squash, halved lengthwise and seeded, cut into ½-inch pieces

Extra-virgin olive oil, for drizzling

Sea salt and black pepper to taste



Instructions:

  1. Heat oven to 425°F. Place squash on a parchment-lined baking sheet, drizzle with a little olive oil and sprinkle with salt and pepper to taste. Toss to coat and arrange on the sheet so that pieces are not touching. 

 2. Roast until squash is golden brown on all sides, about 25 to 30 minutes.
